New Year, Same Goals

At the end of 2013 I was out of control. Seriously, I couldn't stop eating and drinking. I chalked it up to post wedding bliss and enjoyed the rest of the year.

When I stepped on the scale this Monday I wanted to cry. All the hard work I did to lose weight before our wedding was very quickly creeping back on! Since Neil and I had some success doing Atkins we decided to get back on the low carb bandwagon.

Monday night was a rough start due to the fact that we only hard carbs in our apartment and it was too freezing to leave. So, although I made salmon for dinner, we did have some rice to accompany it. Tuesday I was inspired to cook and find new recipes so we aren't eating the same thing every day!

I found this link to a few meals that looked pretty good and started cooking! 

Low carb meals

For dinner on Tuesday I made Shakshuka (Recipie here).
I thought this was really good, just needed a bit more seasoning. Also, I made the eggs overeasy, so I would do it again and make them a little more runny.

In addition to this, I also made a few dishes to have around to nosh on. I think that's always what kills me. I snack and then realize I just ate a ton of crap!

I made Bacon Cheddar Cauliflower Chowder.
This was amazing!! I think next time I make it I would use a little less cheese, because it did taste really heavy. I also substituted regular bacon for turkey bacon and that was super good!

I also made Cauliflower mac n' Cheese and Vietnamese Cauli-Fried Rice 
Last night for dinner I made the Pizza Frittata and that was awesome! A few things I would change with this receipie:
     1. Less eggs (it calls for 12, that's ridic) 
     2. I'd add tomato sauce or paste to the receipie
     3. I'd use more motzorella cheese. 

 
Because I feel like I've been in the kitchen for days on end, I also made tonight's dinner which is the Zucchini Enchiladas 

 
 Very excited to see how these turn out!  Hopefully this year I can stick to making an effort!
