In an effort to eat better Neil and I have spent the last two Sunday's cooking, cutting, shopping and preparing food for the weekend! Yesterday I made chicken noodle soup to have for lunch during the week. I bought a whole chicken and baked it in the oven:
Thanks go to Santa for the meat thermometer! We cooked it based on temperature, not by time! It was super moist!
I then took all the meat off the bones and put the "rest" in a pot with water to make a chicken stock and I have to say, it was super good! I've never made a stock before from scratch, but recently my future mother in-law made some soup that was amazing and the extra touch was definitely the broth!
I let that simmer most of the night and then this morning I cut up the celery, onion and green onions and put it all back in the pot together with some whole grain rice, parsley and oregano.
