Since I've been on a project in Southern California I've become OBSESSED with Pho. We are currently staying in an area near Huntington Beach called Fountain Valley, which is boarding a neighborhood referred to as Little Siagon. According to google Little Siagon is roughly 3 square miles and packs in more than 4,000 Vietnamese American businesses, including hundreds of shops and restaurants. One of our first nights here we ventured down the street to 'Pholicious' and it was delicious (sorry, had to go there).
Pho (pronounced Fa) is a Vietnamese noodle soup usually served with beef or chicken (I have been getting mine with Shrimp or Tofu). The soup includes noodles made from rice flour and is often served with Asian basil, saw tooth herb rau om (rice paddy herb), cilantro, thinly sliced green onion, lime juice, and bean sprouts that are added to the soup by the person who is dining.
All in all it's amazing! Super light, but very filling. You can also make it as spicy as you want. I have found myself eating it multiple times in a week and when my assignment is over here I am going to be sad to not have it on a regular basis. So if you haven't tried Pho, I highly recommend it! For a first timer I suggest waiting until the weather cools down a bit, it's a great cold day meal!
